Most "conventional" coffee is harvested at low altitude and uses machines to strip the entire tree of its fruit whether it is ripe or not. This results in a "battery acid" bitterness and aftertaste.

We hand pick our coffee cherries at peak ripeness at high altitude when they have the most amount of sugar for peak flavor and health. The fruit is then fermented and dried in the sun to infuse our beans with a rich flavor.
- Antioxidants are natural compounds plants develop to defend themselves from pests and disease.
- When the coffee is taught to heal itself through natural methods instead of being reliant on outside substances it naturally creates more antioxidants.
- When coffee is grown symbiotic with the life in the soil and other plants around it, they tend to receive more nutrients and substances that contribute to more complex flavors and an overall better feeling brew
- We then hire people in our community to sort through all the beans to pick out anything that doesn’t meet our standard. Picking out the small amount of defective and moldy beans that are full of ochratoxin. Afterwards we get our coffee lab certified to be mold free guaranteeing max health benefits!
Together we are putting our one full time worker Dailyn through college so that she may elevate herself and reach her fullest potential!
She works with us during the week and takes a 4 hour trip to and from classes twice a week. Her relentlessly great attitude and work ethic is what holds the operation in Honduras together!
Her dream one day is to have her own coffee farm- and together we will make the dream a reality!
